WHere is a home-style version of a drink from our latest cocktail list. It's a batch premix that is bursting with flavours of the holiday season, which makes it ideal for a holiday party. Any leftover syrup for morning drinks, puddings, or to mix more rounds of this cocktail.

Serves 10 guests
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Put every items in a pan, bring to a simmer, stirring so the sugar melts. Then, turn off the burner allowing it to cool completely. Decant to a sterilised bottle, close it keeping it chilled, it will last for up to four weeks.
Preparing the Batch Mix: Pour every liquid ingredients into one big jug, allow it to infuse for one hour, then filter it best through a fine cloth, to ensure it's perfectly clear.
When ready to serve: Pour 85ml of your batch mix into your mixing glass containing ice, and agitate gently for a minute until cold. Pour to a cold coupe glass or equivalent, decorate with a few cranberries and complete it using a brief mist with the mandarin essence over the drink.
